Buttermilk Pancakes

2 cups flour
1 teaspoon baking soda
1 tablespoon sugar
½ teaspoon salt

Sift together 3 times.

2 cups buttermilk
2 eggs
2 tablespoons safflower oil (or corn oil)
2 tablespoons white vinegar

Add to liquid. Stir, and leave lumpy.


  Bake on hot griddle. Flip when bubbles break. Pancakes are done when tops are soft to the touch.
