Traditional Yeast Bread

3 Cups very warm water
4 Tablespoons sugar or 2 Tablespoons honey
2 Packages dry yeast
1 ½ - 2 Cups whole wheat flour

Combine water, sugar (or honey), yeast and flour to make the sponge. Let this mixture bubble up. After bubbled, stir down and add remaining ingredients

¼ Cup oil (Safflower is preferred)
2 Cups hot milk
2 Tablespoons salt
4 Tablespoons sugar or 2 Tablespoons honey
Additional Flour (may be Rye, White, etc.)

Mix well, and stir in additional flour. Add flour until dough sticks together. Grease hands and knead on floured board or counter. Add white flour in final stages to lighten the bread. When dough doubles, punch down, and form into 4 regular loaves. Let rise until doubled in bulk in oven on pilot. Bake at 350 degrees for approximately 50 minutes. Pop out of pans and butter or oil tops of loaves. Save some for the kids.
